Sage & Thyme Breakfast Sausage Patty

Ingredients:

1 kg ground pork & beef mince (or just beef if you prefer)

2 Tbsp finely chopped fresh sage

2 Tbsp finely chopped fresh thyme

4 tsp light brown sugar

3 tsp kosher salt

2 tsp crushed fennel seeds

1 tsp crushed red pepper flakes

1/2 tsp freshly ground black pepper

1/2 tsp garlic powder

1/2 tsp smoked paprika

Instructions:

In a large bowl, mix all the ingredients until well combined. Don’t be afraid to get your hands in there!

Divide the mixture into 8-10 portions and shape them into patties.

Heat a pan over medium heat and cook the patties for 3-4 minutes per side, until browned and cooked through.

Let them cool completely before assembling the muffins or freezing.

Assembling the Breakfast Muffins

Now for the fun part—putting it all together!

Ingredients:

8-10 sausage patties

8-10 fried eggs

8-10 slices of cheese (I’m partial to Gouda, but cheddar works too!)

Spicy mayo (just mix mayo with your favorite hot sauce)

8-10 sourdough English muffins (I love using the This Is us brand for the perfect texture and flavour!)

Steps:

Spread a little spicy mayo on each half.

On the bottom half of each muffin, layer a sausage patty, a fried egg, and a slice of cheese.

Top with the other muffin half, then wrap each one in baking paper.

Store any leftover components separately to maintain their freshness. Keep the cooked sausage patties in an airtight container in the fridge for up to three days.

If you have extra spicy mayo, it will last up to a week in a sealed jar in the fridge. Just give it a stir before using.

For a quick twist on leftovers, you can build a breakfast wrap instead. Slice up the sausage patty, add the cheese, egg, and mayo, then wrap it all in a tortilla. Perfect for breakfast on the go!
